Merino’s tryst with potatoes

The Merino Group known for its specialities in offering interior solutions for homes and offices worldwide has recently ventured into the food industry. The group started its operations in 1968 with storage facilities for potato at Hapur in Uttar Pradesh. Three decades down the line, these cold storages are operating under CIPC treated environment, ensuring that the potatoes stored in these do not accumulate sugar. In the field of agriculture, Merino has achieved a breakthrough in Biotechnology and has tissue culture laboratory at Bhimtal (Uttaranchal) and Hapur (UP) for development and multiplication of potato seed. Due to exposure to unique mix of Agriculture and Industry, the group today has diversified into manufacturing potato flakes at Hapur, where the entire plant line and technology has been sourced from Netherlands, Europe. Potato flakes are manufactured by applying cooked, mashed potatoes into a drum dryer, which forms a sheet that can be sized and ground to the required form and bulk density. These can be used in all kinds of namkeens, extruded snacks, ready-to-cook food or any other dish cooked using boiled, mashed potato. With potato flakes one can totally do away with the entire process of boiling pealing and mashing of potatoes. Also, wastage at various levels of process is eliminated.

Potato flakes can be reconstituted into potato mesh of desired density, in an easy one-step process, making them ideal for a multitude of commercial, institutional as well as household uses. Also, Merino's state-ofthe- art plant and the process are capable of producing potato flakes with most stringent quality parameters, satisfying all international quality requirements.

Health
The sugar content is controlled below 0.15 per cent. Then again, the flexibility of maintaining the density of the mesh helps in controlling frying media content in the final product. Additionally, it acts as an anti-oxidant and nutrients can be added as per requirement.

Taste
Control over raw material and manufacturing process ensures a standardised taste of fresh potato throughout the year.
